These cookies have an incredible buttery, chewy texture, with a hint of that cozy maple flavor, and then the generous drizzle of maple icing delivers you to a state of utter comestible delight. With a recipe this simple, you will thank us with your first bite. Make sure to double the batch because somehow there are never enough.
Cookie Ingredients:
1/2 cup The Happy Meadow Farm pure maple syrup
3/4 cup packed brown sugar
1/2 cup melted butter
1 egg
1 tsp vanilla extract
1/4 tsp maple extract
1/2 tsp salt
1 1/2 cups self-rising flour
3/4 cup granola, chopped nuts, or crispy rice cereal (optional, but highly recommended)
PREHEAT the oven to 350.
WHISK together the melted butter, the maple syrup, the brown sugar, extracts and egg.
FOLD IN the self-rising flour and salt. The batter will be the consistency of peanut butter, but oh, so much more scrumptious.
ADD your crunchy adornments.
PLOP dollops of the batter onto a parchment lined baking sheet. Be sure to leave these lovelies plenty of space to grow into their full glory.
BAKE for 10-12 minutes, or until they look just a tad underdone. Then pull them out and slap the baking sheet on the counter a couple of times to help them settle into themselves.
Icing Ingredients:
1/4 cup melted butter
1/4 cup The Happy Meadow Farm pure maple syrup
1/4 tsp vanilla extract
1/4 tsp maple extract
1 cup powdered sugar
WHISK all the ingredients together until they become the consistency of thick honey. If the icing is too thick, add a touch of water. If it hardens while working, just microwave it for a few seconds and it’ll loosen right up.
DRIZZLE this velvety wonder all over those cookies after they’ve cooled completely.
